Banana Fritters
This delicious goodness is so easy to make, and a nice way to make use of overripe bananas. Although these fritters are sometimes referred to as banana pancakes, they are not meant to be fluffy like pancakes or bread, but rather thinner and moist in the centre.

Ingredients
2 ripe bananas
3 tbsp sugar (bananas are sweeter the more ripe they are, so adjust to your preference of sweetness)
Pinch of salt
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp nutmeg
1 cup all purpose flour
oil for frying.
Instructions
Mash bananas with fork in bowl, until it’s a liquid-like consistency.
Add brown sugar, vanilla, extract, cinnamon, nutmeg and a pinch of salt, and mix well.
Sift in flour and stir with spoon until fully combined. The batter should not be too thick or thin, but should flow easily off a spoon.
Add oil to a frying pan over medium-high heat. When the oil is hot, drop banana fritter batter in oil by the spoonful. When bubbles appear at the top and it starts to take a golden brown colour, flip the fritter and cook until the other side is golden brown as well.
Drain on paper towels to remove excess oil and enjoy!
