Cabbage Fritters

An alternative to toast, and sometimes called Cabbage Hash Browns - not surprising since they do taste like potatoes!



Cabbage Fritters


Serves: 2


Ingredients

  • 2 cups shredded cabbage

  • 1/4 small yellow onion, thinly sliced

  • 2 large eggs

  • 1/2 tsp salt (add extra to your preferred taste)

  • 1/2 tsp garlic powder

  • A pinch of ground black pepper

  • Oil for frying


Instructions

  1. In a large bowl, whisk together eggs, garlic powder, black pepper and salt.

  2. Add cabbage and onion to egg mixture and combine well

  3. In a large skillet over medium-high heat, heat oil. Divide mixture into 4 patties in the pan and press with spatula to flatten. Cook until golden and tender, about 3 minutes per side.

  4. Drain on paper towels to remove excess oil and enjoy!
