Currant Slice
This delicacy was popular during my childhood, and one of only 2 instances where I'd eat raisins. Wierd! I know. But those of you who have been following my blog would know that I don’t like raisins. However, my mind and taste buds do seem to be able to get past this when it’s in the form of a currant slice!
Currant slice is a pastry rolled and filled with a currant-based filling. As a fulltime working mom, shortcuts are a godsent and necessary! I admit that while pastry made from scratch is probably more authentic, the store bought pastry is a great alternative.
This quick and easy recipe uses readymade /ready rolled puff pastry.

Ingredients
1 packet of readymade ready rolled filo pastry. If you prefer to make this from scratch, you can find a puff pastry recipe here.
250gs raisins
1tsp cinnamon
1 tsp nutmeg
1tsp lemon juice
3 tbsp brown sugar
Instructions
If using dried raisins, cover them with water (water level should be about 1cm above raisins) and soak overnight.
Combine raisins and the remaining water not absorbed, cinnamon, nutmeg, lemon juice in a saucepan. Cover and simmer on medium heat for about 15mins or until most of the water is absorbed, and it’s a syrup-like consistency.
Leave to cool completely. (Tip: The currant filling can also be prepared the day before)
Roll out the dough on a flat surface, and spread the raisin mix evenly across the surface. Then start rolling the dough from one end to the next.
Dissolve a tsp of sugar in a tablespoon of water, and brush it across the surface of the dough.
Cut into pieces with a diagonal slant. Place on a baking tray and bake for 20 – 25 mins at 180 degrees, until golden brown.
Cool, serve and enjoy!
