Caribbean Green Seasoning

So it's Saturday, and you've just returned from the Market with some fresh fish and chicken. In the Caribbean, the typical thing to do is clean and season your meat before putting in the fridge or freezer. That way, when you're ready to cook, you will have perfectly marinated and flavoured meat.


Caribbean green seasoning is a paste made from blending a number of fresh herbs and spices, that will give your dish that full flavour typical of many Caribbean meat dishes.

Caribbean Green Seasoning


  • 4 green/spring onions

  • 1 head of garlic (about 10 cloves)

  • 1 bell pepper

  • 2 pimento or season peppers (optional, but oh so nice with it!)

  • 1 bunch of fresh thyme (about ¾ cups)

  • 2 cups of cilantro (coriander leaves & stems)

  • 1 stalk of celery (can include leaves)

  • 5 pimento seeds (optional)

  • 2-3 tbsp olive or cooking oil


Instructions

  1. Wash the ingredients and let drain.

  2. Roughly dice/chop the ingredients (helps it to blend better and quicker).

  3. Place all ingredients in a food processor or blender, and blend until it forms a paste.

  4. Store in a air tight container for about 3 weeks in the fridge, or place into ice cube trays and freeze for 3 months.
