Saltfish Cakes (Fritters)

This is a favourite across many Caribbean islands, and goes by many names.


Saltfish Cakes (Fritters) Recipe


Serves: 4


Ingredients

  • ½ cup finely chopped onions

  • ½ cup finely diced green/red bell pepper

  • 1 large fresh hot pepper finely chopped (optional)

  • 2 Tablespoons shallots

  • 1 cup flour

  • 1 teaspoon baking powder (omit if using self raising flour)

  • Salt and black/white pepper to taste

  • 1 egg lightly beaten

  • ¾ cup milk

  • 1 Tablespoon butter

  • 2 tablespoons of ketchup

  • ½ lb salted cod fish, cooked and flaked


Instructions

  1. Combine dry ingredients in bowl.

  2. In smaller bowl, mix egg, butter and milk.

  3. Make a hole in dry ingredients; pour egg mixture into and mix lightly.

  4. Add chopped vegetables, salt fish, ketchup, salt and pepper to taste. Stir well.

  5. Drop by spoon full into hot oil. Cakes will float to the top when cooked. Brown and serve.
