Sweet Potato Pudding (Pie)

Crunchy around the edges, moist and sweet in the middle. For those of us with a sweet tooth, this is a little slice of heaven!





Sweet Potato Pudding


Ingredients

  • 2 cups grated sweet potatoes

  • 1 cup grated coconut

  • 3 cups all purpose flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 cup sugar (add more if you prefer it sweeter)

  • 1 cup water

  • 1 tsp nutmeg

  • 1 tsp cinnamon

  • 1 tbsp cooking oil

  • 1 tsp vanilla essence


Instructions


  1. Pre-heat your oven at 350 degrees celcius.

  2. In a large mixing bowl, combine the all-purpose flour, sugar, salt, nutmeg, cinnamon, and mix well to combine.

  3. Stir in the oil, grated coconut and sweet potato, and mix well.

  4. Add water a little at a time to the mixture and combine well. Mixture is ready when the spoon can stand straight without falling.

  5. Mix in the vanilla essence well.

  6. Pour mixture into a greased baking tin (or lined with baking paper), and bake for 1hr and 10 minute.

  7. Test pudding is ready by sticking in the centre with a dessert knife. If the knife comes out clean, then pudding is finished baking.

  8. Cool, serve and enjoy!
